Tesco Real Food

There’s nothing like getting family and friends around the table for a meal and a catch up. We all lead such busy lives these days it’s hard to find time to devote to meals together, but whenever I make the effort I’m really glad I did. Feeding people is a way of showing my love!

That’s why I’m delighted to be involved with Tesco’s Real Food campaign. They want all the great cooks in Britain to share their favourite recipes. There are lots of different categories and you could win some fabulous prizes and even go through to appear on a television programme! What I cook often depends on my mood – do I fancy something hot and spicy, a traditional roast or a healthy salad? Even the weather can have an effect on what I want to eat – a summer barbecue or a winter warming casserole? When I go shopping I don’t always know what I’m going to cook – I like to get inspiration from what I see. Tesco understand that people cook “Mood Food” so that’s why they’ve created all the different categories in their competition.

My category is “More than Four” - if you’re having family or friends (or both!) over for a special meal what would you cook? Ideally we’d like recipes that serve 8 or more and preferably 'make ahead' or 'one pot' main courses. Let us know about your side dishes too – interesting vegetable recipes or your favourite salad that you’d serve alongside. What sort of occasion are you cooking for? A special Birthday lunch, a casual supper with friends, an outdoor summer party or a posh dinner for your boss!

If I’m having friends over for a relaxed evening I often cook my version of Jambalaya - my husband Eamonn's favourite. I like to serve it in a big pot at the table and let everyone help themselves which makes it a very sociable meal. Have a look at my recipe in the “More than Four” category.
